Criolla Potato existentialist soup (vegan)

Criolla potato soup. Made with cebolla larga, Colombian name for scallions, grated carrot, finely chopped celery, yellow zucchini, broccoli my favorite small trees, lots of criolla potato (papa criolla), brown potato (know as parda here), garlic in extremis and cilantro.  For all the words in italics, do yourself a favor and go to a Latino market to find these goods, or try in an Asian market as well. It’s called existentialist soup. Who knows why. ♡ Criolla potato is typical from Colombia, but you can also find it in other parts of South America. Its yellow color is joyful and its flavor is soft and melts in your mouth. It’s cheap, delicious and rich in Vitamin A or beta-carotene, good for the skin and afterlife visions. It also contains enough Vitamin B6 or pyridoxine, recommended to fight stress, melancholic moods and it’s supposed improve sleep troubles, but my insomnia can’t even be calmed by the Being and Nothingness. Its scientific name is sunny as its colour, Solanum Phureja. I don’t have anything left to say, grab a pot and make yourself a soup to see if your existential boredom goes away.
